Summer in London brings out an entirely new city, the moment the sun is shining us Londoners make sure we can lap up every moment of sunshine as physically possible.
Whether it means reading in the garden, finding a park on my lunch break or standing outside a pub in the humid evenings. We are determined to make the most of every possible dry moment. Working in the city means we all have pretty busy schedules and finding time to all hang out can be hard in between holidays, work deadlines, partying, and life.
But Saturday was one of those special moments when the sun was beaming, the girls were all free and to celebrate Laura’s shiny new job we headed to hers for a mid-afternoon Pimm’s o’clock session.
To start the celebrations we relaxed on the sofas, gulping Pimm’s with elderflower and blackberry. We nibbled on sundried tomatoes, goat cheese, olives, celery, carrots and a huge helping of hummus.
Sat in her stunning garden, surrounded with beautiful bright flowers, a wooden canopy wrapped with grape vines trailing across. Lanterns hanging from above and candles spread throughout we relaxed in the reclaimed outdoor furniture. The exposed whitewashed bricks perfectly accompanied the charming hanging clocks and candlesticks on the wall.
In between munching we took it in turns catching up on the last few weeks of gossip. We shared stories from Laura’s new job, Lauren’s staycation & Rachel’s theatrical performances. Plus I couldn’t resist adding a few tales from my trip to Benicassim. Talking at a hundred miles an hour all determined not to not miss a single detail we’d worked up an appetite.
Before our domestic goddess served us grilled halloumi, orange and walnut salad piled high on rocket and spinach accompanied with a vinaigrette dressing.
Wine time began starting with white then red.

The cheesy light salad was delicious on a hot summer’s day.
Laura was determined for us to eat until we were too full to leave and served up a delicious portion of salmon, couscous, lemon and tzakiti dip.
This was one seriously seductive salmon. We couldn’t keep our eyes off it.
We tucked into mango & passion fruit cheesecake and a couple bottles of Prosecco. After the bubbles, the dancing began.
The drinkies started kicking in and the mischief began.
Lauren & James showed us some ‘dirty dancing’ moves.
Our al fresco dining continued with a cheese board and huge helpings of Sangria. We giggled away under the stars and countless tea lights dotted throughout the garden.
Such a great evening, we were thoroughly spoilt by our hostess with the mostess.
